One of the dim sum items that I cannot afford to miss is Lo Mai Gai. Literally speaking, Lo Mai means glutinous rice or sticky rice, and Gai means chicken. It is sticky rice with chicken wrapped in lotus leaf. When I make this dim sum for my family, they always cannot wait to have it.
Inside the wrap is chicken pieces, shrimps, black mushrooms, and Chinese sausage, but we do not put in sausage for healthy reason.
Before I take a bite of it, I usually lean my head very close to it, breathe deeply and smell its aroma from the lotus leaf. Then I eat it slowly to taste every single bit of it.
